The short list of what mattered:

Check whether prompts give people something specific to answer — this alone ruled a couple out for me.
Look at whether there is a web version as well as an app — most apps are quiet about this.
Find out how many prompts the profile format offers — check it on a real account, not a demo.
Worth confirming whether you can undo an accidental swipe — genuinely worth knowing up front.
Check how consistent match quality is week to week — it is easy to test and rarely advertised.
